Rare Roast Beef Bagels

Thinly sliced rare roast beef, with dill pickled gherkins, sauerkraut, lambs lettuce mustard and mayonnaise stuffed bagels. You can buy your bagels pre-made or make your own! I made my own for this, by adapting bbcgoodfoods ‘Bagels for Brunch‘ recipe. I added milk powder for a super soft and rich flavoured dough.

For cooking the beef, I followed this guide from Riverford, to ensure I got that blushing pink in the middle.

If you have a meat thermometer, the centre wants to reach around 50-55C for rare.

Ingredients

  • 500g Top-Side Beef Joint

  • Black Pepper

  • Salt

  • Mustard

  • Sauerkraut

  • Mayo

  • Dill Pickled Gherkins

  • Lambs Lettuce

  • 4 Bagels

Method

  1. Preheat the oven to 180C.

  2. Sear the Beef in a hot pan on all sides for 3-4 minutes in total.

  3. Place on a wire rack sat on top of a roasting tray. Place in the oven for 40 minutes for rare, 50 minutes for medium-rare. If you have a meat thermometer, the centre wants to reach about 50-55C.

  4. Once the time is up, bring the roast beef out of the oven and cover loosely with tin foil. Leave to rest for 20 minutes.

  5. Carve the beef against the grain, into thin slices.

  6. Lightly warm your Bagels then cut in half. Slather one side with mayonnaise and the other with mustard.

  7. On top of your base bagel half, layer up the lambs lettuce and sauerkraut then top with the rare roast beef slices. Add a couple of dill pickled gherkin slices and season with salt and pepper.

  8. Pop on the Bagel lid and squish down to merge it all together.

  9. Grab the bagel with both hands and squeeze tightly to hold it together before attempting to fit it all in your mouth. You can also cut them in half for an easier approach, but wheres the fun in that?
