5-Minute Blueberry Compote




Perfect for jazzing up your morning breaky and ready in just 5 mins! I’m on a yoghurt and fruit hype at the moment and had a mild panic when I realised I’d run out of the fresh stuff BUT thankfully, I had some frozen blueberries stashed away in the freezer to save the day. Whipped this up in 5 minutes and it was so easy and delicious I thought it best to share!

Ingredients

  • 100g Frozen Blueberries

  • 1 Tbsp Water

  • 1 Tsp Agave

Serving Suggestions
  • Coconut Yoghurt

  • Pumpkin Seeds

  • Cinnamon

Method

  1. Add all of the compote ingredients in a saucepan and place over a medium for about 5 minutes.

  2. Squish the berries with the back of your spoon or spatula to make it extra juicy. Transfer to an airtight container and keep stored in the fridge when cooled. Use within 2 weeks.

  3. Serve on top of some Coconut Yoghurt, with a sprinkle of pumpkin seeds and cinnamon for a delicious breakfast in minutes. Alternatively, swap the yoghurt out for some warm pancakes, waffles or cinnamon french toast for a weekend brunch feast!
